I love caramel corn its kinda a weakness of mine. And unfortunately I found out that I love white chocolate popcorn almost as much. To tell you the truth I made it so that I wouldn’t eat it!!! I’m not a big fan of white chocolate but hello no such luck in not liking it, that popcorn was so good! dang it.
This recipe is too easy for words in fact I’m almost embarrassed about how easy it is. But us mommas have got to stick together and share our wisdom and easy recipes. LOL
The first thing I do when I make caramel popcorn is try to get as many of those blasted kernels out of my goodness!! I do this by hand scooping my popcorn out into a another bowel and leaving most of those hard little unpopped kernels behind.
then you add the melted white chocolate. I melt my chocolate in the microwave because I’m lazy and I don’t want to get out my double boiler. If you choose the lazy way out just be very careful to melt slowly and check and stir every 30 sec. I use one bag of chips and 1 Tb of coconut oil to about 2-3 bags of popped popcorn. I love to get the lightly salted diet kind, because it gives it a sweeter taste.
Then you just dump and stir. I like to layout a few sheets of parchment paper and just spread out the popcorn to dry a bit. At this point you can add sprinkles which is most certainly is a must! See easier than pie for sure! lol Don’t say I didn’t warn you that this wont last long even with chocolate lovers in the house.
